Laos is full of street food. My biggest fear is that they will go the same route of Chinese Dai Pai Dongs.. Great food hidden away or even destroyed in favor of a more “Western” appearance.
The Fish you saw on the top started out like this fish.
Taken out of a medium metal tub where it had moments before been swimming with other soon to be eaten delicacies. Thoroughly coated in a salt rub it is placed on the grill where the heat cooks the fish, pulling juices out to mix with the salt to form a salty, tangy crust. Yum.
So easy I want to bring some sort of makeshift grill with me the next time I go fishing and just cook one straight out of the water like they do in Laos.
