Buffalo seems to be an incredibly sought after option in dining, especially here in Lung Prabang.
Now, to explain my cryptic title: my girlfriend calls me hou-ai, which means buffalo in Lao, because of my (apparently) insane love for vegetables/plants/herbs.
Let’s see if I can draw picture. Everytime we have noodle soup or Vietnamese food, a customary plate of accompanying vegetables/herbs is served. I consume the entire plate. We have a deal going. If I give her all of my long beans I can have her plate of veggies/herbs. Three or four beans for a while plate of veggies? ummm YES!

This is the skin with some hair on it. Really, that’s all I got. Sorry :P
This is the part of the skin that people seem to like eating. I bought some for coworker of mine and he told me that you heat it in a pan. It looks like it could be more subcutaneous fat than skin.
From far away, I thought this was baby alligators… Can you guess? It’s buffalo lung!
